Gliadin describes a class storage proteins found in wheat grains. Based on its solubility, α-,β-,γ-, and ω-gliadin can be distinguished. Gliadin is a common substrate of transglutaminase, which generates neo-epitopes by deamidation of glutamine side chains. DIARECT™ antigens are for further manufacturing or research use only.
